If your loved one is tired of eating quick oatmeal fixed in the microwave, then try baked pumpkin oatmeal. Since this recipe is made the night before, breakfast will be ready quickly.


1/2 cup applesauce
1/2 cup honey
1/4 cup brown sugar
2 eggs
1 (14 oz can) pumpkin
1 cup milk
1 tablespoon baking powder
1 teaspoon pumpkin pie spice
1/4 teaspoon cinnamon
1/16 teaspoon salt
3 cups quick oats
1 cup all-purpose flour
4 tablespoons cold unsalted butter


  1. Slightly spray a two-quart casserole dish with cooking spray.
  2. Combine all the ingredients except the flour and butter in a bowl. 
  3. Fold in the oats.
  4. Pour mixture into baking dish.
  5. Refrigerate the mixture overnight.
  6. Combine the flour and butter. Mix until the mixture is crumbly.
  7. Sprinkle the flour mixture on top of the oatmeal mixture. 
  8. Preheat oven to 350 degrees.
  9. Bake until slightly golden. This will take about 30 minutes.
