Healthy Holiday Recipe: Savory Oven-Roasted Brussels Sprouts

What You’ll Need

  • 2 pounds of brussels sprouts
  • 1/4 cup extra-virgin olive or coconut oil
  • 6 green onions, chopped
  • 3 cloves of garlic, crushed and minced
  • 1/2 teaspoon of natural smoke flavoring
  • 1 cup of purple baby or fingerling potatoes, diced
  • Salt and pepper to taste

 

 

 

 

 

 

Preparation

Rinse the brussels sprouts, remove the ends and peel off any bad outer leaves. Then, slice them in half lengthwise. Pour them into a large casserole dish and set aside. Next, cut up your green onions, garlic and potatoes and add them to the dish. Add the smoke flavoring for a savory, off-the-grill taste, sprinkle on your salt and pepper, drizzle the oil over the entire dish and toss until everything until evenly coated. Cover the casserole dish and bake at 400 degrees until the sprouts and potatoes are tender.
